Strawberry Avocado Salsa Chicken

Being one of my favorite summer recipes (but can also be made in any season), this strawberry avocado salsa chicken is refreshing, healthy, and delicious. The zestiness and acidity from the lime paired with the slight sweetness of the strawberry and the mild avocado all make for a PERFECT balanced bite. This recipe is gluten-free, dairy-free, and refined-sugar-free. It’s easy to throw together, requires minimal ingredients, and will definitely be added to your weekly dinner rotation! Recipe listed below:

INGREDIENTS:

  • One small diced avocado
  • One cup diced strawberries
  • Juice of 1/2 lime
  • 1 tsp lime zest
  • 1/2 small red onion, diced
  • 1 tbsp honey (can adjust sweetness level)
  • Salt to taste
  • LOTS of cilantro, chopped
  • Chicken tenderloins or breasts (1 lb)
  • 2 tbsp avocado or EVO oil
  • 1-3 cloves of garlic, minced (depending on how garlicky you’d like it to be)
  • 2 tsp honey
  • 1/2 tsp salt
  • 1 1/2 tbsp lime zest
  • 1/4 cup cilantro
  • Juice of 1 1/2 limes (use the other half of the first lime)
  • OPTIONAL: serve with brown rice, quinoa, or cilantro lime rice*

INSTRUCTIONS:

  1. MARINATE YOUR CHICKEN: combine raw chicken, oil, desired amount of minced garlic, 2 tsp honey, 1/2 tsp salt, 1 1/2 tbsp lime zest, 1/4 cup cilantro, and juice of 1 1/2 limes in a bowl. Cover, set in the fridge, and let marinate for at LEAST two hours. (I’d recommend marinating the chicken around 6-8 hours in advance, but if you forget to, it’ll still be just as good!)
  2. MAKE YOUR SALSA: Combine the diced avocado, strawberries, juice of 1/2 lime, 1 tsp lime zest, red onion, 1 tbsp honey, salt, and cilantro in a bowl. Mix and set aside in the fridge while you cook your chicken.
  3. COOK YOUR CHICKEN: Drizzle or spray some avocado/EVO oil in a pan over medium heat. Add your chicken to a pan and cook until browned and 165 degrees internal (if you don’t have a meat thermometer, you can just slice a piece in half to make sure it’s fully cooked).
  4. ASSEMBLE: add your carbohydrate of choice to the bottom of a bowl, top with chicken, and then the salsa. I like to finish mine off with some extra cilantro and flaky salt.

*Cilantro lime rice: make by simply adding a juice of 1/2 lime and 1/4 cup cilantro to about 4 cups of white rice.
